Loaded Baked Potato

If you love potatoes then you are in the right place! 


I was craving a baked potato with all the fixins' and I ended up making two kinds, one sweet and one savory. I had the pleasure of teaming up with YouTuber, Pearl of Let's Veg About it who created a video of me preparing these two dishes.

What's on the potato?

Cauli-cheese sauce
Chickpeas
Black beans
Broccoli
Spinach

bac'n bits
avocado
tomatoes
onion
sweet peppers

The potatoes turned out amazing! I baked the potatoes for 45 minutes in a 425 degree oven.
While the potatoes were baking I prepared the toppings.

Cauli-Cheese Sauce

1/2 head of fresh cauliflower
1/4 cup fresh carrot
1/4 cup diced onion
1 diced shallot
1 cup of water

Add all of the ingredients in a pot and cook until carrots are tender. Then transfer the cooked veggies to a blender and add the following seasonings:

2 tsp sea salt
1/4 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
a few dashes of black pepper
1 tsp of spicy brown mustard 

Blend the cooked veggies and spices until the consistency is smooth and sauce will be ready to serve.                       

Note: The cauli-cheese sauce is full of flavor without the fat. You can adjust the amount of water to make the consistency of the sauce thicker or thinner. This sauce is also great on broccoli and rice :-D

Chickpeas
1 can of chickpeas drained
1/4 tsp Chipotle chili powder
1/8 tsp black pepper
1/8 tsp paprika
1/2 tsp garlic powder
1/4 tsp onion powder
1/2 tbsp nutritional yeast

Toast the chickpeas in a nonstick pan. Stir until the seasonings begin to form a browned coating on the chickpeas. Once chickpeas are coated it will be ready to serve.


Black Beans
1 can of black beans drained
1 tbsp liquid aminos
1/4 tsp garlic powder
1/4 tsp marjoram

Stir in seasoning to the black beans and add to a skillet. Stir occasionally, once most of the liquid is reduced the beans will be ready to serve.

Broccoli 
1/2 head of fresh broccoli
2 tbsp of liquid aminos
a few dashes of black pepper

Chop broccoli into bite sized pieces, add black pepper and saute in the liquid aminos until the broccoli is cooked through. Once broccoli is tender it will be ready to serve.


Spinach

2 cups of fresh spinach

2 tbsp of bac'n bits
1/2 tbsp olive oil
2-3 tbsp diced onion

Chop up the spinach and saute in olive oil and bac'n bits. Once the spinach begins to wilt add in diced onion

After all of the cooked toppings were prepared I added freshly diced tomatoes, onion, sweet peppers and avocado.
