Be Veg: Saucy Mushrooms

I love mushrooms. I love spinach. I love sauce. Why not combine all three? Here is another easy recipe that it great for breakfast, lunch or dinner. This recipe can be made fat free or with oil, it is delicious both ways. Adjust based on your nutritional goals.

1/8 cup water 
1-2 shallots diced
3-4 tbsp liquid aminos
4 cups mushrooms (any variety)
1-2 tsp marjoram
2 tsp garlic powder or to taste
2 tsp onion powder or to taste
1 tsp black pepper
2 cups spinach

Want thicker sauce? you add flour or cornstarch to the water 

Add water, diced shallots and liquid aminos to the pan and simmer until shallots are soft and fragrant. Add mushrooms and seasonings, wait for the mushrooms to cook down. Once the mushrooms have cooked down taste the broth and and adjust seasonings as needed. Sometimes I add in nutritional yeast and/or paprika for an extra kick of flavor. Stir in spinach until wilted. Serve with/over rice, potatoes, polenta, grits or biscuits.
