Coconut Cashew Cream 1 cup of canned Coconut Milk 1/2 cup Soaked Cashews 1 tsp Vanilla Bean Powder 1/4 cup Maple Syrup Dash of Sea Salt Soak the cashews overnight or for at least an hour. Rinse cashews. Add all of the above ingredients and blend until creamy. You can adjust the consistency of the cream by adding more or less coconut milk. Serves best when chilled but you can use directly after blending. Apple Compote 1-2 Diced Apples 1/4 cup Maple Syrup 1/4 tsp Nutmeg 1/2 tsp Cinnamon 1/8 tsp Ginger Add maple syrup and apples to a small pot, stir in spices. Compote will be ready to serve once the apples are soft and the syrup thickens. Additional Toppings Hemp seeds Dried Mulberries Crushed Ginger Snaps Sprinkle on the above toppings after adding the cream and apple compote to your sweet potatoes. Dig in, it will be delicious! If you don't have mulberries raisins are a great alternative. Check out the video below!
