Be Veg: Loaded Sweet Baked Potato

Welcome to part 2 of my blog/video collaboration with YouTuber, Pearl of Let's Veg About it. If you haven't done so already, check out Part 1, Savory Loaded Baked Potato of this two part series.


If you have a craving for something sweet then this easy recipe will be perfect for you to try.

What's on the sweet potato?

Coconut cashew cream
Apple compote
Hemp seeds
Dried Mulberries
Ginger Snaps

This recipe does not disappoint when it comes to balanced flavors, perfect for the Fall season. These sweet potatoes could be served as part of a meal or as a hearty dessert or snack. 

I used Japanese sweet potatoes for this recipe but this recipe will work just as well the standard covington sweet potatoes too.


I baked the potatoes for 45 minutes at 425 degrees.

Coconut Cashew Cream
1 cup of canned Coconut Milk
1/2 cup Soaked Cashews
1 tsp Vanilla Bean Powder
1/4 cup Maple Syrup

Dash of Sea Salt

Soak the cashews overnight or for at least an hour. Rinse cashews. Add all of the above ingredients and blend until creamy. You can adjust the consistency of the cream by adding more or less coconut milk. Serves best when chilled but you can use directly after blending.


Apple Compote
1-2 Diced Apples
1/4 cup Maple Syrup
1/4 tsp Nutmeg
1/2 tsp Cinnamon
1/8 tsp Ginger


Add maple syrup and apples to a small pot, stir in spices. Compote will be ready to serve once the apples are soft and the syrup thickens.

Additional Toppings 
Hemp seeds
Dried Mulberries
Crushed Ginger Snaps


Sprinkle on the above toppings after adding the cream and apple compote to your sweet potatoes. Dig in, it will be delicious!  If you don't have mulberries raisins are a great alternative.
